Pineapple Chicken Salad Sandwiches




Ingredients

pineapple chicken salad
  • 1 rotisserie chicken, shredded (about 4 cups shredded chicken)
  • 1 cup celery, thinly sliced
  • 1 1/2 cups red grapes, halved
  • 1 cup sliced or slivered almonds
  • 1 small bunch green onions, thinly sliced
  • 1 can (20 oz) crushed pineapple, drained well

creamy dressing
  • 1 package (8 oz) cream cheese, softened
  • 1 cup mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (or use 1/4 teaspoon depending on preference)
  • 1/4 teaspoon pepper

Instructions
  1. Combine all the chicken salad ingredients in a large mixing bowl.
  2. In a seperate smaller mixing bowl, combine all the creamy dressing ingredients. Stir together until combined. Pour the dressing into the chicken salad mixture and stir together until combined and mixed well. 
  3. Cover and let sit in the fridge for 4-6 hours for best taste. Serve in croissants, rolls, or other bread of choice.
