  • 2.5 pounds red potatoes washed

  • 1 Tbsp. thyme and rosemary finely chopped
  • ½ tsp. salt to taste
  • ¼ tsp. pepper to taste
  • Fresh parsley optional

Instructions :

  1. Preheat oven to 400 degrees.
  2. Bring a large pot of water to a boil.
  3. Add potatoes and cook for 30-35 minutes.
  4. In a small bowl combine butter, or oil, garlic, herbs, salt, and pepper. Whisk to combine.
  5. Once potatoes are fork tender, remove from pot and dry thoroughly.
  6. Place potatoes on a parchment paper lined baking sheet. Smash each potato twice with a potato masher or large fork.  (The thinner they are, the crispier they'll be!)
  7. Drizzle each potato with equal amounts of the garlic herb sauce.
  8. Bake in preheated oven for 20-25 minutes, or until potatoes are crispy.
  9. Top with fresh parsley and serve immediately. Enjoy!
