STRAWBERRY LEMONADE COOKIES

These strawberry lemonade cake mix cookies are a hybrid of cookies I’ve made millions of times. I make strawberry cake mix cookies & lemonade cake mix cookies a lot, and I realized those two would make a great combo.

Strawberry Lemonade Cookies Recipe


Ingredients:
  • 1 box of Strawberry Cake Mix
  • 1 box of Lemon Cake Mix
  • 2/3 cup of vegetable oil
  • 4 eggs
  • 1 Tbs of lemon juice (optional)
  • About 1/4 cup of powdered sugar
Instructions:
  1. Preheat oven to 375 degrees. Line cookie sheet with parchment paper or non-stick spray. Mix all ingredients except the powdered sugar into a mixing bowl and mix thoroughly. Dough will be sticky.
  2. Roll dough into 1″ balls (a little smaller than a golf ball) and roll the dough ball in the powdered sugar. I put my powdered sugar in a cereal bowl and rolled it in there so it was less messy.
  3. Place rolled dough balls on cookie sheet and bake for 9-10 minutes. Allow to cool for about 3-5 minutes and transfer to cooling rack.
