GRILLED CHICKEN IN CREAMY MUSHROOM SAUCE
The great thing about chicken is that it comes as a clean slate, and you can dress it up as you want and today we’re dressing it up in a luscious creamy cream-less mushroom sauce that will blow your mind and your tastebuds will never be the same!
This Grilled Chicken in Creamy Mushroom sauce is a restaurant worthy recipe that you can easily make in one skillet at home. Perfect for weeknight dinners!
Ingredients
For the Chicken
- 2 tablespoons oil
- 500 grams chicken breasts skinless and boneless (about 4 medium sized breasts)
- Salt and pepper to taste
For the Creamy Mushroom Sauce
- 5 tablespoons butter
- 1 small onion finely chopped
- 1 cup mushrooms sliced
- 4 tablespoons all purpose flour
- 4 cups milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 2 tablespoons coriander finely chopped
- Salt and pepper to taste
Instructions
For the Chicken
- Heat oil in a skillet and place the chicken in the skillet. Season with salt and pepper, and cook the chicken on both sides until it is golden brown and cooked through - about 3-4 minutes on each side, but the cooking time also depends on the size and thickness of the chicken breasts.
For the Creamy Mushroom Sauce
- In the same skillet, melt the butter and lightly fry the onion until it has softened and is translucent. Then add the mushrooms and cook on medium high heat until the mushrooms are cooked, and then add the flour. Mix and cook for an additional 1-2 minutes until the flour is cooked through.
- Slowly add the milk while continuously stirring until the sauce is smooth. Keep stirring on medium high heat until the sauce thickens, this will take about 5-7 minutes.
- Once the sauce has thickened, add the garlic powder, dried oregano, salt and pepper and stir until combined.
- Serve chicken with rice or pasta, and then drizzle with the creamy mushroom sauce.
- Garnish with chopped coriander.
